Domaine des Païssels

This is a very young estate, starting with 1 ha vinified for the first vintage released in 2011. It was created by two agricultural engineers and oenologists, Marie Toussaint and Vivien Rossignol, who gained their winemaking experience in various vineyards around the world. The parcels inherited from Vivien's grandfather now cover 12 hectares, with vines ranging in age from 30 to over 100 years. The estate is located in Babeau, 5 km from Saint-Chinian, on schist slopes. The name Païssels comes from the small chestnut stakes traditionally used to support young vines pruned in a goblet shape. To preserve the balance of the terroir, no chemical fertilisers or herbicides are used, and the soil is very lightly worked.
